Fold the reserved pieces of pork in the cooked rice.

- 1 pound salt pork and thick-cut bacon diced
- 1 cup onion minced
- 3 cloves garlic minced
- 3 3/4 cups water
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cilantro to garnish
- 1 large egg per serving

- In a fine mesh colander or strainer, rinse the rice under cold running water. Set the colander aside and allow the rice to drain thoroughly.
