In a large bowl add the soy sauce, cornstarch, chicken broth, sugar, and sesame oil and whisk until everything is completely dissolved. Set aside.

In a large skillet add one teaspoon canola oil on medium-high heat,Add the chicken and cook, stirring occasionally, until the chicken is cooked through, about 4-5 minutes. Transfer the chicken to a plate.

Add in the remaining 1 teaspoon oil, garlic, and ginger and cook for 30-45 seconds until very fragrant .add in the sauce, whisking well. Cook the sauce 1 minute.

then add in the zucchini and cook for 3 minutes more, until thickened and the zucchini is tender-crisp.

Add the sauce to the pan and cook until the sauce thickens up about 2-3 minutes. Add the chicken to the pan and stir to combine. Cook for 1 minute, making sure the noodles are well coated with the sauce. Serve immediately.
