The trick when cooking noodles or pasta in the slow cooker is not to overcook. Since the timing is so different based on high v. low, the make and model of the slow cooker, the type of noodles (thick, thin, white, whole wheat, high fiber, etc.), it can be difficult to know how long is exactly right.


It’s important that you follow the cook time listed in the recipe for that specific type of noodles. If you choose another variety, keep in mind that the cook time could vary significantly.

  • 3 tablespoon canola oil
  • 1 tablespoons chile paste
  • 2 cloves garlic chopped
  • 2 cups boneless chicken - cut into 1 inch cubes
  • 1/2 onion sliced lengthwise into eighths
  • 1 carrots coarsely chopped
  • 1 bell pepper sliced
  • 1/2 cup chicken broth
  • 2 tablespoons soy sauce
  • 1 cup broccoli chopped
  • 8 ounces soba noodles cooked and drained
  • 1/2 teaspoon salt
  • 2 tablespoon green scallions
  • 1 tablespoon peeled and shredded fresh ginger
  • Roasted peanut


  • Bring medium size pan of salted water to a boil. Add noodles and cook them on medium heat for about 2 to 4 minutes (depending on thickness of noodles), or until barely tender. Drain and stir in 1 tablespoon of vegetable oil.
  • In a large wok or skillet, heat 2 tablespoons of vegetable oil over high heat. Season chicken lightly with salt and pepper and place it into hot skillet and stir-fry for about 3 minutes or until just cooked through. Remove from the skillet and set aside.
  • Add onion, bell peppers, carrots, broccoli and saute 1 minute then add ginger to the skillet and stir-fry for another 2 minutes.
  • In a mixing bowl combine chicken stock, soy sauce.
  • Add chicken, noodles, and broth mixture to the skillet and stir-fry for 3 minutes or until chicken is hot and fully cooked through.
  • Sprinkle with roasted peanuts and green onions, decorated
