  • 1 lb chicken thighs cut into bite-sized pieces
  • 1/2 zucchini sliced or cubed
  • 2 Tbsp oil divided
  • 2 garlic cloves minced
  • 1 tsp fresh ginger minced
  • sesame seeds and scallion for garnish if desired
