Peel the potatoes and slice into fairly thin pieces. Add the 1/4 cup of vegetable oil and potatoes to the same skillet. Fry the potatoes on medium-high heat for about 15 minutes, stirring gently every minute as the golden crust forms on the bottom.
Add mushroom. add the garlic and salt to taste, and give it a final stir. sprinkle with the chopped parsley and rosemary.
You can opt to add the garlic later after the potatoes and mushroom are browned if you like a more intense garlicky taste.

- 2 garlic clove finely chopped
- salt and pepper
