An easy, fast and flavorful shredded chicken recipe that’s incredibly versatile. It’s my favorite method for making shredded chicken because it keeps the chicken moist, shreds in seconds and infuses more flavor than other methods.

In a large skillet with a lid, preferably non-stick, heat the olive oil over medium heat.
Salt and pepper the chicken breasts and them to the pan to brown for 4 minutes.
Flip over and brown for another 4 minutes.
Add the chicken broth, reduce to medium-low, put the lid on the skillet and allow to simmer for 7-10 minutes.
Remove the chicken from the skillet and allow it to rest for 3 minutes.
Place the chicken in the bowl of a standing mixer. Turn the mixer on the lowest setting, or 1, and mix until the chicken is shredded to the desired texture.
How to shred chicken using two forks!
A simple way to shred chicken is to use two forks. Hold one fork in each hand, and use them to pull the meat apart.
You can shred the chicken into larger or smaller pieces depending on your needs.
To shred chicken using a stand mixer, place the chicken in the mixer bowl. Using the paddle attachment, mix on low speed until the chicken pieces are the size that you want them. It will take less than a minute to shred a whole recipe’s worth of chicken.
You can also use a hand mixer to shred your cooked chicken, if you prefer.
I frequently make a large batch of shredded chicken, freeze it in small containers and then just thaw as needed. It makes my daily recipes a breeze.

Ingredients
- 2 medium boneless chicken breasts halved
- 3 teaspoons vegetable oil
- 1/2 cup water
- salt and pepper to taste
Instructions
- Heat a heavy duty skillet to medium heat. Add the vegetable oil and chicken breasts, sprinkle salt and pepper. Cook for 3-4 minutes on each side or until golden in color. Add 1/2 cup water and cover, simmer for 7-10 minutes.
- Transfer chicken breasts to a bowl, allow to cool, and shred the chicken meat with 2 forks.
