Huevos a la Mexicana is a tasty and super delicious Mexican breakfast that comes together quickly and easily.
Heat olive oil in a large frying pan on medium-high heat.
Add the chopped tomatoes and let them cook for a few minutes on medium-high until they are somewhat cooked and mushy and some of the moisture has evaporated. Add the jalapeño.
Add the eggs and season with 1/4 teaspoon salt and freshly cracked pepper. Cook on medium-low heat, turning frequently. Sprinkle with shallot.
Taste for seasoning and add more salt if necessary
Serve immediately.

- 1/4 teaspoon salt
- 2 Tablespoon shallot chopped
