Ingredients

  • 4 fresh eggs
  • 1 fresh tomato peeled and chopped if in season
  • jalapeño pepper sliced
  • 1 Tablespoon olive oil
  • 1/4 teaspoon salt
  • 2 Tablespoon shallot chopped
  • freshly cracked black pepper

Instructions

  • Heat olive oil in a large frying pan on medium-high heat.
  • Add the chopped tomatoes and let them cook for a few minutes on medium-high until they are somewhat cooked and mushy and some of the moisture has evaporated. Add the jalapeño.
  • Add the eggs and season with 1/4 teaspoon salt and freshly cracked pepper. Cook on medium-low heat, turning frequently. Sprinkle with shallot.
  • Taste for seasoning and add more salt if necessary
  • Serve immediately.
