- 1 pounds beef stew meat
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 tablespoons butter or neutral flavored oil
- 1/2 large onion chopped
- 1 celery stalks chopped
- 3 cups beef broth
- 1 teaspoon dried thyme or 2 teaspoons fresh thyme leaves
- 2 large carrots peeled and cut into chunks
- 1/2 pound potatoes peeled and cut into chunks
- 1 teaspoons cornstarch
- 2 teaspoons water
- 2 tablespoons chopped fresh parsley
Turn the Instant Pot to Saute, then select More. Wait for the pot to heat up, then add the oil.
Add the stew meat to the pot and season with salt and pepper to taste. Cook for 3-4 minutes on each side or until browned.
Place all the meat in the pot along with the onion, garlic, carrots, beef broth, tomato paste, dried thyme leave, bay leaf, and salt and pepper to taste.
Stir to combine. Seal the Instant Pot and set it to Manual High Pressure for 30 minutes.
Carefully vent the pressure valve, or let the pressure release manually.
Remove 1/3 cup of stew liquid from the pot. Add the cornstarch and whisk until smooth.
Pour the cornstarch mixture back into the pot, and turn the pot back to the Saute function.
Sprinkle with parsley, then serve.
