- 2 cups frozen corn thawed
- 1/2 cup all-purpose flour
- 2 egg
- 3 tablespoons chopped parsley
- 1 green onion chopped
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon salt
- 1/4 teaspoon ground pepper
- 1/4 cup heavy whipping cream
- Vegetable or canola oil for frying
- sour cream for garnish
In a large mixing bowl, stir together the corn, flour, salt, chopped parsley, pepper, and cayenne.
Add the eggs and heavy whipping cream and stir until well incorporated.
Heat oil over medium heat in a pan. Spoon 2-3 tablespoons of the corn mixture onto the hot oil. Cook 3-4 minutes or until golden, flip and cook an additional 3-4 minutes.
Serve warm with sour cream and chopped scallions
