- 1 cup whole wheat flour
- 2 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1/2 tsp pumpkin pie spice
- 1/4 cup pumpkin butter or canned pumpkin
- 1 tbsp brown sugar
- 1 cup milk
- 3 large egg whites
- 2 tsp oil
- 1 tsp vanilla
Combine the flour, sugar, pumpkin spice, vanilla, brown sugar, baking powder, and salt in a medium bowl. Add the milk and egg to the dry ingredients. Using a fork, whisk to combine, making sure not to over mix.
Heat a large skillet on medium heat.
Add a teaspoon oil to the skillet and swirl to coat the pan. Pour 1/4 cup of the pancake batter into the center of the skillet and cook for a few minutes until the top begins to bubble and the sides are set (2-3 minutes). Using a spatula, flip the pancake and cook the other side until golden.
Repeat with the rest of the batter.
