- 1/2 pound bacon
- 2 cups potatoes
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2 green onions chopped
- 2 tablespoons olive oil
Put the bacon in a large skillet, and place the pan over medium-low heat. Turn several times, as needed, until the bacon is browned.Remove the bacon.Set aside.
Heat olive oil over medium high heat in a large skillet. Add potatoes to the pan and cook 5-7 minutes, until crispy and golden.
Throw in the cooked crumbled bacon and green onions, and cook for another 1 minute, until the green onions are starting to wilt. Season with salt and pepper.
