Ingredients

  • 1 pound bitter melon about 1 melons
  • 1/2 teaspoon chili pepper flakes
  • 1/2 teaspoon sugar
  • 1 tablespoon minced garlic
  • 2 tablespoons oil for stir-frying
  • 1/2 teaspoon salt

Instructions

  • To prepare the bitter melon, cut in half lengthwise.Remove the seeds .
  • Heat wok over medium-high heat and add 2 tablespoons oil. When the oil is hot, add the minced garlic and chili mixture.Stir-fry briefly until aromatic - about 30 seconds.
  • Add the slices of bitter melon to the wok. Stir-fry over high heat until the melon is considerably softened but still a bit crisp, about 5 minutes. then the salt and soy sauce.Stir in the sugar., then stir-fry 1 minute longer. Until the bitter melon is browning and beginning to soften.
  • Serve hot and enjoy!
