- 1 tablespoon olive oil
- 1 small onion diced
- 2 cloves garlic minced
- 1 cup carrots diced
- 4 cups cabbage chopped approx. 1/4 head of cabbage
- 1 cup green beans chopped in 1 inch pieces
- 1 whole bell peppers chopped
- 6 cups low sodium vegetable or chicken broth
- 1 1/2 teaspoon Italian seasoning
- 1/4 cup celery sliced
- pepper to taste
- 1 tablespoon parsley
Heat the olive oil in a large pot over medium heat. Add the onion, carrot and celery and cook for 4-5 minutes.
Add the garlic to the pot and cook for 30 seconds. Add the red and green peppers, cabbage, Italian seasoning, salt, pepper and chicken broth to the pot.
cook for 10-15 minutes or until vegetables are tender.
Add the green beans and cook for an additional 5 minutes or until tender. Sprinkle with parsley, then serve.
