- 14 ounces ounces sweet or hot Italian sausages
- 1 red bell peppers seeded and sliced
- 1 green bell peppers seeded and sliced
- 1 medium onion halved and thinly sliced
- 2 garlic cloves minced
- 1/2 tsp. ground black pepper
- 1/2 teaspoon salt
- 2 tablespoon green onion minced
In a large skillet, over medium heat add the olive oil and brown the the sausages well but not cooking completely through. Set aside to cool slightly.
In the same pan, add more olive oil if needed. Add the onion and bell peppers to the pan. Cook for a couple of minutes until slightly soft but not completely done. Add the garlic, black pepper, salt . Return the sausage back to the pan and cook until sausage is done, covering for a couple of minutes. Garnish with chopped green onion.
