- 2 cups all-purpose flour
- 1 tablespoon cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup sugar
- 1/2 cup melted butter
- 2 eggs lightly beaten
- 1/2 teaspoons vanilla extract
- 1 1/2 cups chopped apples
- Crumb Topping:
- 2 tablespoon light brown sugar
- 1/4 teaspoon cinnamon
Preheat oven to 400°F. Lightly grease a 12- cup muffin pan with cooking spray or line with baking liners.
Place apple and granulated sugar in a medium bowl; toss to coat, and let stand 10 minutes.
Meanwhile, whisk together flour, brown sugar, baking powder, salt, and cinnamon in a large bowl.
Stir melted butter, vanilla, and eggs into apple mixture; add to flour mixture, stirring until just combined. Divide batter evenly among prepared muffin cups.
Sprinkle the tops with brown sugar and cinnamon.
Bake in preheated oven and bake for 20-25 minutes , until a wooden pick inserted in center comes out clean, remove muffins to a wire rack, and let cool 15 minutes .
