Ingredients

  • For the sauce:
  • 1/2 cup finely chopped red onion
  • 1/4 cup finely chopped parsley
  • 3 tablespoons olive oil
  • 2 tablespoons wine vinegar
  • 1 tablespoon water
  • 1 garlic clove minced
  • 1/2 jalapeno pepper seeded and minced
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper
  • For the mussels:
  • 1 1/2 pounds fresh live mussels
  • 1/2 cup white wine use broth for whole30
  • 1/2 cup water

Instructions

  • Holding mussels under cool running water, scrub with a stiff sponge or vegetable brush, then debeard: grip the tough fibers extending from the shell and pull to remove. Discard beards.
  • Combine all the sauce ingredients in a medium bowl and mix well.
  • Place 1/2 cups of water and 1/2 cup of white wine in a large pot and bring to boil. Add the mussels, cover, and steam until the mussels all open, 5 to 6 minutes. drain water and divide.
  • Sprinkle with parsley, red onion, salt, and all the sauce. Serve with crusty bread slices, if desired.

Notes

Cook mussels for 5 to 6minutes, until they open. Discard any that do not open.
