- 2 tbsp soy sauce
- 1 teaspoon of rice wine vinegar
- 1 lb large shrimp cleaned
- 3 tsp olive oil
- 1 pound asparagus trimmed and cut diagonally into 2-inch pieces
- 1/2 yellow pepper sliced
- 2 cloves garlic chopped
- 1/2 bell pepper sliced
- 1 tbsp grated peeled fresh ginger
- 1 teaspoon salt
- pepper to taste
In a small bowl, whisk together soy sauce, rice wine vinegar, ginger, garlic, set aside.
In a large frying pan, heat 2 tablespoons olive oil over medium-high heat.
Add shrimp to the pan, then season with ½ teaspoon of salt. Cook until the shrimp is pink. Remove the shrimp from the pan and set aside.
In the same pan, heat 1 tablespoons olive oil and add asparagus and bell pepper.
Add then season with ½ teaspoon of salt and pepper. Stir frequently and cook until the asparagus is tender-crisp.
Return the shrimp to the pan, then add soy sauce. Stir until the ingredients are well combined. stir once more, then serve while hot.
