  • 1 tablespoon salt
  • 2 cups uncooked elbow macaroni
  • 2 tablespoons unsalted butter
  • 2 tablespoons flour
  • 1 cups cheddar cheese grated
  • 1 1/4 cup milk
  • 1/4 cup ham chopped into 1/4 inch cubes
  • 1/2 teaspoon lemon juice
  • Freshly grated black pepper
  • salt and pepper


  • Heat water with a tablespoon of salt to a rolling boil in a thick-bottomed saucepan. Add elbow macaroni and follow the cooking time instructions on the package.
  • Cook until al dente—cooked through, but still slightly firm. Drain the pasta.
  • Meanwhile in a large saucepan on low/medium heat melt butter, then add the flour and whisk together until smooth, add cornstarch, salt, and pepper, then slowly add the milk, Slowly add the grated cheese, whisking until smooth. Stir in the lemon juice.
