Ingredients

  • 1 large or 2 small head(s) cauliflower, florets sliced into 1/2-inch slices
  • 1/2 onion peeled, thickly sliced,
  • 2 cloves garlic sliced
  • 2 Tbsp lemon juice
  • 1/3 cup extra virgin olive oil
  • 1 1/2 teaspoons yellow curry powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  • Preheat the oven to 400F.
  • Put the garlic, olive oil, lemon juice, curry powder, salt, and pepper in a large bowl. toss to coat well.
  • Rinse the cauliflower and cut it up into florets.
  • Add the cauliflower and onion slices to the bowl with the curry and toss to coat. Spread the cauliflower and onion slices on the baking sheet in a single layer.
  • Roast in the oven at 400°F for 25 to 30 minutes until well browned.
  • If desired, sprinkle a handful of minced cilantro on top, and serve.
