Pasta with Shrimp & Sugar Snap Peas

Ingredients

  • 1 lb Pasta dente
  • 1/2 lb Lrg Shrimp shelled & deveined
  • 1 - inch fresh ginger peeled & crushed or finely diced
  • 2 cloves Garlic crushed or finely diced
  • Kosher Salt to taste
  • 2 tablespoons olive oil
  • 1/2 teaspoon crushed red pepper flakes
  • 1 cup Sugar Snap Peas or snow peas
  • 2 Tablespoons Soy Sauce
  • 1 Tablespoon fresh Lime Juice
  • small bunch fresh Cilantro torn or cut in 1-2" sections.

Instructions

  • Bring a large pot of water to boil for the pasta while your slice and dice the ginger, garlic, and chiles. When water comes to a boil, salt it well, then toss in the pasta.
  • Stir after it comes back up to a boil. Drain and rinse under cool water. Set aside.
  • Add salt and pepper to taste on the shrimp. in the pot Add 2 tablespoons olive oil, add garlic, ginger, and chiles. Saute for a minute or so, then add shrimp and cook for another couple minutes or until shrimp are almost cooked through. Remove shrimp from the pan.
  • Add the pasta to the pan with the shrimp and mix. Add in the Sugar Snap Peas, add the Soy Sauce, or more salt to taste.
  • Top with fresh parsley if desired and fresh Lime Juice.
