- 1 pound dry black beans
- 4 slices center-cut bacon chopped
- salt and pepper
- 1/2 medium white onion diced
- 1 teaspoon cumin
- 1 tablespoon chili powder
- 1 teaspoon smoked paprika
- Freshly ground black pepper to taste
- 3 cloves garlic minced
- 2 tablespoon Green onions chopped
Rinse beans and add 5 cups of water to the Instant Pot with the softened black beans. Cook on high pressure for 30 minutes. After 30 minutes, allow your pot to naturally depressurize. Drain and rinse beans.
Meanwhile, in a small bowl, combine the cumin, chili powder, smoked paprika, 1 tablespoon kosher salt, and pepper.
Switch to the pot to “Sauté” When hot, add the bacon and sauté for 1 minute. Add the onions and sauté for 3 minutes. Add the Green onions and the garlic and sauté for 30 seconds more. Pour in broth and drained beans and mix well.
