How to Make an Omelette

Ingredients

  • 2 large eggs
  • 1 tablespoon unsalted butter
  • 3 to 4 cherry tomatoes cut in half
  • sprinkled lightly with salt
  • 2 tablespoons chopped basil parsley, or herb of your choice

Instructions

  • In a bowl, beat the eggs.
  • In a nonstick skillet over medium-low heat, melt the butter.
  • Add the eggs to the skillet and Don't stir! Let the eggs cook for up to a minute or until the bottom starts to set.
  • With a heat-resistant rubber spatula, gently push one edge of the egg into the center of the pan, while tilting the pan to allow the still liquid egg to flow in underneath. Repeat with the other edges, until there's no liquid left.
  • Begin cooking the eggs for the omelet in a pan gently move the egg around in the pan to make an American style omelet
  • Place the tomatoes, and herbs in a line down the center of the omelet and cook for about 1 minute longer, or until the eggs are mostly set but still a little soft in the center.
  • Slide the spatula around one side of the omelet at the edge to loosen it. Slip it under the eggs, and use it to carefully fold the omelet in half.
  • Tilt the pan over a plate and use the spatula to nudge it onto the plate.
  • Gently transfer the finished omelet to a plate. Garnish with chopped fresh herbs if desired.
