Ingredients

  • 1 cup whole wheat flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1/4 cup pumpkin butter or canned pumpkin
  • 1 tbsp brown sugar
  • 1 cup milk
  • 3 large egg whites
  • 2 tsp oil
  • 1 tsp vanilla

Instructions

  • Combine the flour, sugar, pumpkin spice, vanilla, brown sugar, baking powder, and salt in a medium bowl. Add the milk and egg to the dry ingredients. Using a fork, whisk to combine, making sure not to over mix.
  • Heat a large skillet on medium heat.
  • Add a teaspoon oil to the skillet and swirl to coat the pan. Pour 1/4 cup of the pancake batter into the center of the skillet and cook for a few minutes until the top begins to bubble and the sides are set (2-3 minutes). Using a spatula, flip the pancake and cook the other side until golden.
  • Repeat with the rest of the batter.
  • Serve.
