Ingredients

  • 1 pig feet
  • 3 slices of ginger
  • 3 pieces of scallion
  • 2 tbsp of Chinese cooking wine
  • 2 cloves of garlic
  • 3 tbsp of sugar
  • a bunch of scallions
  • 2 pieces of star anise
  • Few pieces of Red pepper flakes
  • water
  • 2 tsp of salt or to taste

Instructions

  • Remove the pig hair if there is any or ask your butcher to do it for you. Mine is pretty clean though. Cut the pork trotter into smaller chunks.
  • Bring water to a boil in a large pot and cook the pig trotter for 2-3 minutes. Transfer out and wash under running water. This process can help to remove the odd taste as much as possible.
  • And then in a high pressure cooker or electric cooker or a pot, cover pig trotter with enough water, add ginger slices, green onion, star anise and cooking wine. Cooked. Transfer the pig trotter out and the liquid can be kept as soup stock.
  • Heat up 1 tablespoon oil in wok, Put a small amount of rock sugar into the pot. Boil with small heat until all rock sugar dissolved; Add trotter in, Add ginger , Red pepper flakes, salt and garlic, pour some cooking liquid in the previous until the pig trotter is almost covered. Pour the sugar color in the previous step and soy sauce. Heat over high fire with the lid uncovered until there are large bubbles in the pot and the sauce is almost dried up.
