- 2 cups potatoes
- 1 garlic clove minced
- 2 tbsp oil
- 2 tsp lemon juice
- 1 tsp Salt
- 2 tbsp finely chopped scallions
- 1 tsp parsley minced
Potatoes cut wedges. Place the potatoes in a small pot and add enough water to fully submerge them. Bring to a boil over high heat (about 8 minutes).Drain the potatoes.
Heat the oil in a non-stick skillet and add the potatoes, Season the with salt, pepper. Add the garlic, mix well.
keep cooking the potatoes, stirring occasionally, allowing them to brown and fully cook through. Garnish with parsley and serve immediately.
