White Chicken Chili

Ingredients

  • 1 lb boneless skinless chicken breasts trimmed of excess fat
  • 1 yellow onion diced
  • 2 cloves garlic minced
  • 2 cups chicken broth low sodium
  • 8 oz cans great Northern beans drained and rinsed
  • 8 oz cans diced green chiles
  • 8 oz can whole kernel corn drained
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3/4 tsp oregano
  • 1/2 tsp chili powder
  • small handful fresh cilantro chopped
  • 4 oz reduced fat cream cheese softened

Instructions

  • Place chicken into a 6-qt slow cooker. Stir in chicken stock, green chiles, beans, onion, garlic, corn and oregano; season with salt and pepper, to taste.
  • Cover and cook on low heat for 7-8 hours or high heat for 5-6 hours.
  • Remove chicken from the slow cooker and shred, using two forks.
  • Stir chicken, cilantro and lime juice into the slow cooker; season with salt and pepper, to taste.
  • Serve immediately with desired toppings.
