Raisin Bran Muffins

This is a recipe that will make you feel healthy. So much bran and raisins in every bite will do that for you. It does for me at least.

Ingredients

  • 1 cup flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1 cup raisins
  • 1/4 cup shortening
  • 1/4 cup brown sugar
  • 1/4 cup white sugar
  • 2 eggs
  • 1 cup milk

Instructions

  • Preheat oven to 400°F. Line 12 muffin cups with papers or grease well.
  • Combine flour, baking powder, salt, cinnamon and raisins in a bowl, mix well and set aside.
  • Combine shortening and sugars with a hand mixer on medium until fluffy. Add eggs and beat until incorporated.
  • Stir in milk . Add dry ingredients and mix just until moistened.
  • Divide over prepared pans and bake 20-25 minutes. Cool in tin 5 minutes, then turn out onto a wire rack; let cool completely, or serve warm.
