Ingredients

  • 1 cup quinoa
  • 1 1/2 cups water
  • 1 pound green beans trimmed (cut crosswise into 1-inch pieces)
  • 1 tablespoon extra-virgin olive oil
  • 1 small onion minced
  • 2 cloves garlic minced
  • salt and pepper to taste
  • 2 tablespoons fresh parsley roughly chopped

Instructions

  • Once water is at a rolling boil, add 1 tablespoon salt and green beans, and cook for 5-8 minutes until cooking until bright green, Drain, and rinse in cold water.
  • Heat 1 tablespoon oil in a saucepan over medium-high heat. Add onion and garlic, 1/4 teaspoon salt, and a pinch of pepper. Cook, stirring, until translucent, about 3 minutes. add the quinoa and cook for 1 minute. Add water. Reduce to a simmer and cook, covered, until water is absorbed, about 15 minutes.
  • Remove from heat. Let stand 10 minutes. Cool completely.
  • Combine quinoa, green beans, and parsley. add the 1/2 teaspoon salt, and pepper to taste. Enjoy!
