Ingredients

  • 2 teaspoons cornstarch
  • 1 Tbsp Shaoxing Chinese cooking wine or dry sherry
  • 1/2 teaspoon salt
  • 1 pound shrimp peeled and deveined
  • 2 Tbsp peanut oil or other vegetable oil
  • 1 Tbsp minced ginger
  • 3 garlic cloves sliced thinly
  • 1/2 pound snow peas
  • 2 teaspoons soy sauce
  • 1/4 cup water

Instructions

  • In a small bowl, make the sauce: Whisk together soy sauce, cornstarch dissolved with water, dry sherry, and salt. Set aside.
  • In a large wok or large frying pan, combine 1 Tbsp oil and garlic, and cook on medium heat about 30 seconds until fragrant. Add snow peas, and cook until veggies become tender. Transfer to a bowl and set aside
  • In the same wok or pan, heat 1 Tbsp olive oil. Add the shrimp, ginger, and stir-fry for 2-3 minutes or until the shrimp turn pink.
  • Toss the cooked snow pea mixture back into the wok with shrimp. Add sauce mixture Stir gently until everything is heated through.
  • Serve with rice.
