- 2 teaspoons cornstarch
- 1 Tbsp Shaoxing Chinese cooking wine or dry sherry
- 1/2 teaspoon salt
- 1 pound shrimp peeled and deveined
- 2 Tbsp peanut oil or other vegetable oil
- 1 Tbsp minced ginger
- 3 garlic cloves sliced thinly
- 1/2 pound snow peas
- 2 teaspoons soy sauce
- 1/4 cup water
In a small bowl, make the sauce: Whisk together soy sauce, cornstarch dissolved with water, dry sherry, and salt. Set aside.
In a large wok or large frying pan, combine 1 Tbsp oil and garlic, and cook on medium heat about 30 seconds until fragrant. Add snow peas, and cook until veggies become tender. Transfer to a bowl and set aside
In the same wok or pan, heat 1 Tbsp olive oil. Add the shrimp, ginger, and stir-fry for 2-3 minutes or until the shrimp turn pink.
Toss the cooked snow pea mixture back into the wok with shrimp. Add sauce mixture Stir gently until everything is heated through.
Serve with rice.
