  • 1 can 8 oz chickpeas
  • 3 large hard-boiled eggs sliced crosswise
  • kosher salt and black pepper to taste
  • 1 tablespoon chopped red onion
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon chopped fresh cilantro

Instructions

  • Toss all the ingredients in a medium bowl.
