- 1/2 pound bacon
- 2 cups potatoes
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2 green onions chopped
- 2 tablespoons olive oil
- Put the bacon in a large skillet, and place the pan over medium-low heat. Turn several times, as needed, until the bacon is browned.Remove the bacon.Set aside.
